Methods For Preparing Jhangri, Boondhi And Gulab Jamun

Jhangri

Ingredients

Urad Dhal - 500 gm
Rice Flour - 1 tbsp
Sugar - 750 gm
Water - 400 ml
Vegetable Oil - 500 ml


Soak urad dhal in water for about 2 hours and then remove water. Grind the soaked dhal till you feel that is suitable for pressing and if it be little bit dilute add some rice flour. Take sugar and water in a pan and boil it for the string consistency. After getting string consistency remove the pan from fire and allow it to cool down. Take oil in a pan and heat it over a medium flame. Now take urad flour in a presser and press into oil clockwise then anti-clockwise. After boiling remove excess oil and gently put into sugar syrup to get sweet jhangry.

Boondhi

Ingredients

Besan Flour - 500 gm
Rice Flour - 1 tabsp
Cooking Soda - As Required
Ghee - 1 tabsp
Cashew Nuts - As Required
Cardamom Powder - As Required
Cloves - As Required
Raisins - As Required
Food Color - A Pinch
Sugar - 750 gm
Water - 350 ml

Fry cashew nuts, cloves and raisins with ghee in a pan and set them aside. Take sugar and water in another pan and boil it over a medium flame till you get string consistency. Add fried things into the sugar syrup and also mix food color. Now mix well besan flour, rice flour and cooking soada until you get batter consistency. Place vegetable oil in a pan and put it over the flame. When it starts to boil, spread the batter over the oil using a boondhi ladle so that it falls down into the oil. After the droplets are boiled drain excess oil from them and mix well with sugar syrup. Boondhi is now ready!

Gulab Jamun

Ingredients

Sugar - 600 gm
Water - 200 ml
Milk - 1 liter
Maida - 200 gm
Cooking Soda - As Required
Vegetable Oil - 500 ml
Rose White Essence - 1 tbsp

Take milk in a pan and heat it to get condensed milk. Now mix maida, cooking soda and rose essence with the condensed milk and make them into small balls. Place sugar and water in a separate pan and boil it to get sugar syrup in a half string consistency. Place oil in another pan on fire to cook gulab jamun balls. Then gently put cooked balls into the sugar syrup. That's All!
